You would be amazed to know jut what is involved in brewing the perfect cup of tea. It is almost a science!! But don't worry it isn't Advanced Chemistry and there's no Calculus involved. Just a little time and attention. Here's what you need to know about your tea....
First: Buy High Quality Tea. Harney & Sons is known for their excellent tea. Your tea will only be as good as the leaves you brew.
Second: Use chlorine free water. The Chlorine in city water taints the taste of the tea although if you really like the way that your water tastes by itself this isn't as big of a deal.
Third: Heat fresh water on the stove top. This causes the water surface to become super oxygenated, helping to release more flavor from the leaves as well as to make a livelier taste. Microwaves in contrast tend to take oxygen out of the water leaving you with flat tasting water.
Fourth: Put one level teaspoon of tea into infuser for each 8 oz. of water. If making a pot, measure how many cups it holds and put 1 level teaspoon for each 8 oz. cup. Forget adding one teaspoon for the pot.
Fifth: The temperature of the water makes a difference. Simple Black, Flavored Black, and Herbals should be brewed at a higher temperature than Green, White and Herbal Teas.
For black, and herbal Teas Pour boiling water over leaves, it is important that you shock the tea by pouring water over the leaves, it gives a better flavor than putting the leaves in after you have poured the water. Put Infuser lid on to steep.well as to make a livelier taste. Microwaves in contrast tend to take oxygen out of the water leaving you with flat tasting water.
For Brown Tea you should brew at a slightly lower temperature than boiling so take the water off the heat just before it starts to boil.
For Green and White Teas make sure to take the water off the heat before it begins to boil. Heat the water until steam is just starting to escape from the kettle. Pouring boiling water over green and white teas is usually to hot. It scorches the leaves and turns the tea bitter. If you have ever wondered why your green tea tends to taste like spinach water or grass it is because it has been over brewed or brewed at too high of a temperature.
Sixth: Brewing your tea for the right amount of time is important. Here is a time chart for brewing different types of tea:
Green Tea……………………………….3:00-3:30 mins.
Black Tea (Flavored &Simple) ………..5:00 mins.
Herbal…………………………………...5:00 mins.
White Tea…………………………….....3:00-4:00 mins
Remove infuser from the tea and place in lid to catch drips. Tap leaves out into the disposal and rinse out any leafs that may be left in the infuser. Your infuser is ready for the next cup
